Ahhh... Thanksgiving! It's that time again when we slow down our busy Fall
schedule to spend a little extra time with those we love, allowing our precious
God, the Giver of good gifts, to remind us of all for which we have to be
thankful. And, of course, it's also the time of year when we get to break
out our favourite Fall recipes. Below is one of our family's favourite
Thanksgiving recipes (although I have been known to make this dish at numerous
family get-togethers throughout the year!).
Originally taken from a Southern cooking-style website, I have
tweaked/subtracted/added amounts over the years to suit our family's
taste. Give it a try (and be sure to do your own tweaking!). I'm
SURE this is gonna be a family favourite in your house too!
...and Happy Thanksgiving (or Merry Christmas!)!
- 5 cups (approx. 6 potatoes) mashed sweet potatoes (poke several holes and microwave until tender... about 12 minutes... cool & skin comes off easily)
- 3/4 cup brown sugar
Combine first 6 ingredients. Pour
into a buttered (I spray Pam) 2-quart casserole dish (I use 9-13 pan so everyone
gets lots of topping). =) Mix remaining ingredients together and sprinkle over
top. Bake at 350 F for 45 minutes, until hot and browned.
Serves 6 to 8.
** I have
tweaked the original recipe by increasing potatoes (originally called for 3
cups), reducing the brown sugar by half, and increasing Topping
ingredients by half. Yummmmm!
